Mathéline est un atelier artisanal de pâtisserie qui fonctionne sur commande (pas de magasin) et n'a donc pas de stock.
Ceci afin de garantir la fraîcheur et d'éviter les invendus.
Il est aussi à noter que tout est fabriqué à l'atelier sans 'mix' ni 'mélange tout fait', ni arome ou colorant. Et en faisant attention à la provenance des ingrédients.

Les biscuits sont fabriqués à la main qu'ils soient réalisés 'au rouleau', à la poche, ou découpés. Les ingrédients sont choisis avec soin, dans le circuit conventionnel. Sans additifs ni colorant.
